Mitin Shiro Recipe (Red Chickpea Stew)
Serves for 4 – 5 people

Ingredients:

  • 1 cup finely chopped onion
  • ½ cup cooking oil of your preference
  • 4 cups water
  • ½ cup Mama Fresh Mitin Shiro (red shiro)
  • Salt and pepper to taste
  • Directions:
    Heat pot on stove. Cook onions for two minutes before adding oil, stir gently. Sauté onion until they are soft and translucent. Add water and bring to a boil over medium to high heat. Once the onion and water mixture has come to a boil, reduce heat and add Mama Fresh Mitin Shiro. Continue to cook for an additional 10 to 12 minutes, stirring constantly to avoid premature thickening. Add salt and pepper to taste.

    Eat with Mama Fresh Injera.

    White Shiro Recipe (Chickpea Stew)
    Serves for 4 – 5 people

    Ingredients:

  • 1 cup finely chopped onion
  • ½ cup cooking oil of your preference
  • 4 cups water
  • ½ cup Mama Fresh White Shero
  • 2 cloves chopped garlic
  • Salt and pepper to taste
  • Fresh green pepper for garnish
  • Directions:
    Heat pot on stove. Cook onion for two minutes before adding oil, stir gently. Sauté onion until they are soft and translucent. Add water and bring to a boil over medium to high heat. Once the onion and water mixture has come to a boil, reduce heat and add Mama Fresh White Shiro and garlic. Continue to cook for an additional 10 to 12 minutes, stirring constantly to avoid pre-mature thickening. Add salt and pepper to taste.

    Garnish with fresh green pepper and eat with Mama Fresh Injera.

    Kitfo Recipe
    Serves for 4 – 5 people

    Ingredients:

  • 2.5 lbs beef, minced finely (can be ribeye, strip loin or flank steak)
  • 1 cup unsalted butter
  • 4 tsp Mama Fresh Mitmita
  • 2 tsp Mama Fresh Ground Cardamom
  • Salt to taste
  • Directions:
    Place the beef in the freezer for 30-45 minutes to get it firm, and then use a very sharp knife to mince the meat as finely as possible. Soften butter in microwave or on stovetop. In a large bowl, mix together the minced beef, butter and spices. Place meat mixture in a hot frying pan, and cook until beef is medium rare (or to preference).

    Eat with Mama Fresh Kocho or Mama Fresh Injera
